Banana-Chocolate Chip Cake

Preheat oven to 350 degrees.

Mix together in large bowl. (I use a potato masher.)

  • 1 stick butter (soften 15 seconds in microwave)
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/4 cup sour cream (I’ve substituted apple sauce or yogurt)
  • 1 teaspoon vanilla
  • 2 bananas
  • 1 1/2 cups flour
  • 1/4 teaspoon salt

When mixing is complete, fold in 1 cup chocolate chips with spatula.

Pour into Pam-sprayed Bundt pan and bake for 1 hour.

After it’s cooled, turn onto a plate and sprinkle with 10 x sugar.
