Bubbe’s Kitchen: Easy Leftover Chinese Rice Vegetable Soup

I make this when I have a carton of rice left over after ordering Chinese food.

Ingredients:

  • 1 cello packet of Manischewitz or Streit’s Vegetable Soup Mix
  • 1 cello packet of Manischewitz or Streit’s Minestrone Soup Mix
  • 1 carton of Chinese food rice
  • 1 bag of frozen mixed vegetables
  • Cut-up butternut squash or sweet potato
  • 1 can of garbanzo beans
  • Optional: flanken or other soup meat browned with onions
  • Vegetable oil

Directions:

If using soup meat, first brown it with one cut-up onion in a little oil. Then add other ingredients (except for soup tubes) and water to cover all. Bring to a boil and then add soup tubes and seasoning packets. Simmer for 2 to 3 hours and then enjoy!
