
Ingredients:
- 6 oz. semi-sweet chocolate, grated
- 2 cups flour
- 1/2 tsp baking powder
- 1 tsp salt
- 4 tsp instant coffee
- 3 eggs
- 1 1/4 cup sugar
- 2/3 cup margarine
- 2/3 cup cold water
- 1 tsp vanilla extract
Directions:
Preheat oven to 350 F.
In a large bowl, mix the flour, baking powder, salt and coffee.
In a stand mixer, beat the eggs, sugar and margarine.
Alternate mixing in the dry ingredients and the cold water.
Add the vanilla. Stir in the grated chocolate.
Pour the batter into a loaf pan and bake for 45-50 minutes OR pour into muffin tins and bake for 20 minutes.
