Kamish bread is another name for Mandel bread, a twice-baked cookie in Ashkenazi Jewish cuisine that’s similar to biscotti. Make these crunchy and crispy cookies today using parve ingredients.

Ingredients

  • 1 cup sugar
  • 3 eggs
  • 1 cup oil
  • 2 dashes salt
  • 1 tsp vanilla
  • 1/2 cup chopped walnuts
  • 1 cup chocolate chips
  • 3 1/2 cups flour
  • 1 tsp baking powder
  • Cocoa powder
  • Cinnamon sugar

Directions

Stir together the sugar, eggs and oil. Add salt and vanilla. Stir in walnuts and then stir in chocolate chips. Add flour and baking powder.

Set oven to 350 F. Put half the batter on parchment paper on a baking pan. Roll to make a loaf. Sprinkle on cocoa powder and cinnamon sugar.

Make the second loaf.

Bake for 40 minutes. Slice into biscuit shape and flip sideways on pan. Sprinkle with cinnamon sugar and return to oven for 5 minutes. Turn oven off and leave in oven until cooled. Leave out over night to harden up and enjoy with morning coffee.
